Marie's Pick: Jalapeno Jam

Kozlowski Farms Old Fashioned Jalapeno Jam. Marie uses it as an ingredients in stirfry and beans. It's also great as a glaze for chicken and fish, or combined with cheese on a cracker. The two-peppers are combined with pure cane sugar to achieve this unique and stunning Jalapeno Jam. It's just hot enough to use as a side dish condiment for pork and poultry. Think Local: Taro

We have amazing organic dryland taro from Kupa'a Farms, grown in Kula. “Kupa’a” means “firm” or “solid” in Hawaiian and although the name originated in reference to the rocky soil here, it now reflects the solid, life-giving practices that we use to grow food. The farm is 4 acres of cleared land in the dry leeward slopes of Halaekala. Soil is the heart of any agricultural operation and Kupa'a does their best to keep the soil alive and healthy and work hard to limit the amount of erosion. They use compost, compost tea, cover crops, perennial vegetative barriers to limit erosion, and by avoiding bare soil fallow. More about the farm here

The Rosemary is my favorite, while the Coconut Curry is the best seller for the company. The other flavors we carry are Parmesan Romano, Pizza Marinara and Hickory Barbecue. Delicious Living: Chocolate-Date-Nut Bars

12 medjool dates (pitted) , 1/2 cup almonds, 1/2 cup hazelnuts (no need to remove skins) ,  4-ounce bar dark chocolate (60% cocoa works well, broken into small pieces), 2 tablespoons hemp seeds, 2 tablespoons chia seed.

Place dates in a food processor and pulse until well chopped. Add almonds and hazelnuts and pulse until chopped, but a few large pieces remain. Remove cover and make a circular trough in the mixture with the back of a small spoon.

Place chocolate pieces in a small bowl over hot but not boiling water. Stir until melted. Carefully pour melted chocolate into prepared trough in date-nut mixture. Replace cover and pulse a few times, until just combined.

Scrape mixture onto a cutting board and form a rough rectangle. Cut into eight equal pieces. Combine hemp and chia seeds on a small plate. Mold each of the cut pieces into evenly shaped bars, warming mixture with your hands. Press bars gently into seeds to coat. Place on a small tray, cover with plastic, and refrigerate for about an hour, or until very firm. Once firm, bars may be individually wrapped and kept at room temperature.

Thai Beef Salad recipe


Anne Gale's award winning  
THAI BEEF SALAD|
6 New York steaks
1 medium red onion
1 basket cherry tomatoes
3 stalks of lemongrass
½ bunch cilantro
2 tablespoons fish sauce
2 limes
1 tablespoon red chili flakes (more to taste if you like)
4-6 tablespoons olive oil
Lettuce for garnish
Slice of red bell pepper for garnish
Sear 6 NY steaks with 2-3 tablespoons of olive oil.  Slice thinly and set aside. Chop cilantro and lemongrass, mix with fish sauce, red chili flakes, juice of two limes, and 2 tablespoons of olive oil.  Thinly slice the red onion and cherry tomatoes.  Toss with herb mixture.  Add steak.  Serve on a bed of lettuce and garnish with a slice of red pepper. Serves 6-8 people.

Delicious Living: Kiwi-Cucumber Cooler

6 kiwifruit, 1 large cucumber (peeled and cut into chunks), 16 fresh mint leaves, 1 1/2 cups coconut water, Juice of 1 lime, Several ice cubes, 4 teaspoons agave nectar (or to taste).
Cut kiwi in half crosswise and scoop out flesh with a spoon; place in a blender. Add remaining ingredients and blend until smooth.

Gluten Freedom: 10 Minute Fish Tacos


1 package of Simply Organic Fish Taco seasoning, ¼ C warm water, 1 tsp. olive oil, 1 pound of cod or halibut, 1 large lime, GF corn tortillas, chopped cabbage, chopped red onions
Mix contents of packet with ¼ C warm water into a bowl. Place ½” strips of fish in a plastic bag. Add 2 Tbsp of vegetable oil and coat  fish thoroughly. Add taco marinade and coat fish again.
In a  large skillet, cook marinated fish completely. Squeeze 1 large lime onto fish before serving. Makes 4, 2 taco servings. Serve with a big salad and you have a lovely meal

Gluten Freedom: 20 minute Vegetarian Chili


Simply Organic vegetarian chili mix, 1-15oz can kidney beans, 1-15oz can of pinto beans, 1-28oz can of diced tomatoes
Drain beans. In a large saucepan, add beans, and can of tomatoes. In a bowl, mix chili packet contents with  ¼ C warm water, stirring until completely dissolved. Add seasoning liquid to the beans and tomatoes. Bring to a boil, turn down heat to low and simmer for 15 minutes or until desired thickness is reached. Makes 6 servings. Serve over rice and a side of coleslaw and you’re good to go!

Gluten Freedom: 15 minute Pad Thai


Tasty Bite Pad Thai cooking sauce, 1 Tbs coconut oil, 1 C cubed chicken, Rice Noodles ( I like Annie Chun's Pad Thai noodles), handful of roasted peanuts, fresh chopped cilantro, wedges of lime                    
Heat a pan to high, Add oil , When hot, add chicken and sear for 2 minutes
Pour entire pouch of Tasty Bite Pad Thai Sauce into pan and stir. Reduce heat to low and simmer for 10 minutes. Remove from heat. While the sauce is cooking, make the noodles according to instructions on the package. After the noodles are drained, plate and pour sauce over the bed of noodles, Garnish with lime, cilantro and peanuts. Serve with steamed veggies tossed in minced garlic, coconut aminos and sesame oil and you have a tasty meal
