Award winning Thai Beef Salad


Mana Foods' Chef Ann Gale's award winning Thai Beef Salad recipe:
6 New York steaks,     1 medium red onion,     1 basket Hana Fresh cherry tomatoes,     3 stalks of Maui lemongrass,     ½ bunch locally grown cilantro,       2 Tbsp fish sauce,    2 Maui limes,      1 Tbsp red chili flakes (more to taste if you like),    4-6 Tbsp olive oil,    lettuce for garnish,    slice of red bell pepper for garnish.
 Sear 6 NY steaks with 2-3 tablespoons of olive oil. Slice thinly and set aside. Chop cilantro and lemongrass, mix with fish sauce, red chili flakes, juice of two limes, and 2 tablespoons of olive oil. Thinly slice the red onion and cherry tomatoes. Toss with herb mixture. Add steak. Serve on a bed of lettuce and garnish with a slice of red pepper. Serves 6-8 people.

Did you know?

Mana Foods is now using compostable/biodegradable trays in the meat department. These environmentally friendly trays are made from 100% wheat stalk that has been certified Gluten Free and is organic and GMO free. They are chemical and bleach free. Home composting time 2-4 months.

Reforestation 1 little tree at a time.

Christina and Tara also planted tress as part of Luna Nueva's ongoing efforts with the Corridor Reforestation Project. In an effort to encourage the large mammals such as the jaguar and puma to return to healthy numbers in our forest, we have begun a project building biological corridors. Species which require a large area of forest to live and hunt happily can increase in numbers when they are not confined to a single area or altitude. Due to invasive human intervention much of their natural habitat has been divided.
Buy planting trees, Tara and Christina helped reach the goal of connecting the 50 hectares of Luna Nueva's rain forest with the 22,500 hectares of The Children's Eternal Rain Forest. We hope that by planting trees that extend sections of the rain forest, Luna Nueva can create protected corridors, enabling wildlife to travel through much larger areas.

Sacred Seed Sanctuary, Costa Rica

During their stay, Tara and Christina toured the Sacred Seeds Sanctuary, Luna Nueva' s dynamic collection of over 300 tropical medicinal plants. This sanctuary protects and celebrates not only biological diversity in Costa Rica and the tropics, but also the diversity of cultural knowledge related to these plants worldwide. In a world where 50 to 200 species become extinct every day due to deforestation, over harvesting, or other human activity, the sanctuary aims to preserve the genetic material and cultural use of these plants.

Gluten freedom: Elena’s Honey Muffins

3 eggs,    2 Tbs melted butter or coconut oil,     2 Tbs milk or non-dairy substitute,    3 Tbs honey,    ¼ tsp salt,    ½ tsp vanilla extract,    ¼ cup sifted coconut flour,    ¼ teaspoon baking powder,    Blend together eggs, butter or coconut oil, milk, honey, salt and vanilla. Combine coconut flour with baking powder and thoroughly mix until smooth. Pour batter into greased muffin cups. Bake at 400F for 15 minutes. Makes 6 muffins.
