Cooking with Meyer lemons

The skin is so thin and tender it can be eaten. You can candy the peel with superfine sugar or using in savory dishes, like roasted vegetables and baked fish. Or, you can arrange thin slices of Meyer lemons on a pizza crust and top with goat cheese, rosemary and Picholine olives.
