2 1/2 lbs Yukon Gold potatoes, peeled,
quartered, 3 Tbl olive
oil, 2 Tbl prepared horseradish, Bubbie’s of course, Salt
and Pepper to taste
Cook potatoes
in large pot of boiling water until tender (20 minutes, or so). Drain, setting
aside 1 C of the cooking liquid. Place in large bowl. Add the 3 Tbs of olive oil.
Mash until potatoes are smooth, adding the reserved cooking liquid by 1/4
cupfuls to moisten, until the desired consistency is reached. Mix in horseradish.
Season to taste with salt and pepper.
